Chef Calombaris: “Tortellini in brodo”. That’s a really correct pronunciation! But for the rest… Dough made with a mixer (OMFG!), tons of oil, egg whites, cream!!! And then calamari, lemon, fish sauce and TAMARIND?Please have mercy for our beautiful dish. This is all wrong chef. https://www.youtube.com/watch?v=pF_N7kGZkiQ
